Loqimat

Loqimat
are deep-fried dough balls served with caramel or honey. They
sometimes accompany Omani coffee, but are most commonly seen at the
iftar (breakfast) table during the fasting month of Ramadhan. Loqimat
are delicious when crisp but are often served cool, when they are
chewier. This recipe comes from Eat Omani by Omer Al Aamri:
Ingredients
1
box commercial loqimat mix, or mix
½ kg bread flour and 1 teaspoon baking powder together with ½
teaspoon salt
1
litre water, or slightly less
Enough
oil for deep frying
Half
a small jar of honey or other syrup
Method
Add
enough water to the loqimat mix to form a moist dough.
Let
the dough rest for one hour.
Heat
oil for 10 minutes.
Form
dough into small balls about 1 cm across and drop into the oil.
Fry
till the balls are golden brown.
Remove
with a slotted spoon and drain.
Pour
honey over the loqimat, and serve immediately.
Zanzibari
families make a similar dish called kalimat.
