Ramadhan recipes: Omani shorba

Omani Shorba  شوربة  عمانية


Shorba is eaten anytime and comes in many forms. It is often seen during Ramadhan. This recipe is from Eat Omani by Omar Al Aamri:

Ingredients
250g wheat in grain form
500g mutton or beef on the bone
2l water
2 teaspoons salt
Half teaspoon pepper
Pinch cardamom
Half teaspoon butter or ghee
One can of evaporated milk (about 160ml)

Method
Soak wheat for three hours.
Rinse the wheat and boil with meat in water on medium heat for 45 minutes.
Add salt, pepper, cardamom, butter or ghee, and milk, stirring well.
Let stand for 15 minutes. The consistency should be watery. Serves four.
