Ramadhan recipes: Shayariya

Shayariya شعيره

Shayariya is often seen during Ramadhan as it is quick to prepare and easily digested. It is best enjoyed hot, but may also be eaten chilled. This recipe is from Eat Omani by Omer Al Aamri:

Ingredients
1 litre of water
4 dessertspoons sugar
1.5 cups barley
1 small can of evaporated milk, about 160ml

Method
Heat water in a pan, then add sugar and mix.
Bring to a boil and add barley.
Cook on a medium fire for ten minutes, stirring constantly.
Add evaporated milk.
Cook on a low fire for five minutes, or until the liquid thickens to the consistency of honey.
